After a sumptuous meal, it’s always a nice thing when the kids find a dessert in the fridge that’s ready to be enjoyed. Here are a few easy desserts that you can prepare and stick into your fridge a few hours or even a day before your meal:
Red Rubies and Jackfruit Jelly
This delicious chilled dessert consists of ‘red rubies’ made from diced water chestnuts coated in tapioca flour and sliced jackfruit then set into a milk based sweetened agar-agar. It has a sweet taste and everyone looks forward to biting into the chewy tapioca coating of the ‘red rubies’ with the water chestnut within. This jelly dessert is quick to prepare, goes refreshingly well with Asian meals and is best served well chilled.
Chocolate Ice Cream
This deliciously creamy chocolate ice cream has a silky smooth texture. It can easily be made without the use of an ice cream maker using just three ingredients; a chocolate bar, MARIGOLD Sweetened Creamer and heavy cream. Break the chocolate bar into pieces, microwave gently until it has melted and is smooth and then stir in the condensed milk and set aside. Whip the heavy cream till soft peaks form then fold into the chocolate mixture until well incorporated. Keep the mixture in an airtight container and freeze for at least 4 hours before serving. Scoop out your ice cream and enjoy!
Milk Chocolate Mousse
A chocolate mousse is a popular choice when entertaining guests as it can easily be made ahead and chilled in individual serving glasses. This dessert is essentially chocolate melted gently in milk, cooled down then folded together with cold whipped cream. The mousse is then lightly spooned into stemmed glasses, covered and chilled for at least four hours until it sets. To serve, decorate the top with a dollop of whipped cream, strawberry slices, shaved chocolate and finish with a dusting of cocoa powder. It has a light melt-in-your-mouth richness, a delicate texture and tastes amazing.
