Prosperity Prawns with Creamy Miso Sauce (BM)


Ingredients for prawns:

  • 8 tiger prawns

  • 1 tbsp tapioca starch

  • ½ cup rice flour

  • 1 egg

  • 1 tsp cayenne pepper

  • 1 tsp salt

  • 1 tsp sugar

Ingredients for miso sauce:

  • ½ can MARIGOLD Evaporated Filled Milk

  • 1 tbsp miso paste

  • 1 tbsp unsalted butter

  • 1 tsp plain flour

  • 1 tsp ginger, chopped

  • ½ tsp sesame seed, toasted

  • 2 cloves garlic, chopped

  • Salt to taste

Ingredients for garnishing:

  • Broccoli, steamed

  • 7 sprigs of parsley

  • 1 tsp dried cranberries, chopped

  1. Cut the prawn into butterflies and remove the veins.

  2. Mix tapioca starch, cayenne pepper, sugar, salt and egg until it forms a batter.

  3. Dip the prawns in the batter and coat with rice flour.

  4. Deep-fry the prawns in hot oil for 5 minutes.

Miso sauce

  1. Chop garlic, ginger and dried cranberries. Set aside.

  2. Melt butter and cook garlic and ginger until fragrant.

  3. Add in miso paste, flour, and toasted sesame seed.

  4. Add in MARIGOLD Evaporated Filled Milk, salt and heat mixture while whisking continuously.

  5. Ready to serve with prawns.

Chef's Tip:

Wash the prawns before peeling to retain its natural sweetness.
